Calamansi fruit
Calamansi, also known as “tắc” or “quất” in Vietnam, is a tiny fruit with a punch of flavors. It is a common ingredient in most Vietnamese kitchens as well as many street drinks. Its citrusy flavors combined with a balanced sweet-tart taste make it an ideal component in preparing fruit tea. When making calamansi tea, it is suggested to choose fresh calamansi with green-yellow skin. Unripe calamansi often has little juice and can make the tea drinks bitter.
Tea
Depending on personal taste and preference, you can choose green or black tea to make the tea base. However, each type has its advantages and disadvantages.
Green tea has a slightly astringent taste which blends perfectly with the sourness in fruits. Therefore, it is commonly used in fruit tea, particularly scented green tea like jasmine, lotus, and Thai green tea. Nevertheless, green tea prices are often higher than black tea, which may be an issue for daily use or small tea shops.

The sourness of calamansi, the light astringency of tea, combined with the sweetness of honey, creates an attractive and flavorful beverage. With a few simple steps, you will get a tasty glass of calamansi honey tea with a light aroma and sweet-sour taste.
Ingredients
- 2 green tea bags
- 6 fresh calamansi
- 2 teaspoons honey
- Water
- Ice
Instructions
Step 1: Prepare the ingredients
- Firstly, remove the stems and wash the calamansi. Then, leave them in salt water for about 10 minutes and drain. Because the calamansi peels are reused, keeping them in salt water can help remove bacteria.
- Cut the calamansi in half, then squeeze the juice through a strainer to remove the seeds. Leave one fruit and cut it into thin slices for decoration.
Step 2: Brew the tea
- Boil about 500ml of water. Let it cool down a little before adding tea bags. Allow them to brew for 5 minutes, then remove them to collect the tea liquor.
Step 3: Assemble the drink
- Pour the tea liquor into the glass. Add calamansi juice and honey gradually, then stir well until dissolved. You can adjust the amount of honey depending on your taste.

- 1 tea bag
- 4 calamansis
- ½ aloe vera branch
- 3 teaspoons sugar
- Salt
- Ice
- Water

Step 1: Prepare the ingredients
- Wash the aloe vera, remove the skin, and cut the inner flesh into cubes.
- Then wash the aloe vera cubes with diluted salt water and rinse several times with clean water.
- Blanch them with hot water, and then drain.
- Wash the calamansi and cut them in half. Squeeze them to get the juice and remove the seeds.
Step 2: Brew the tea
- Put the tea bag into a glass with 200ml of hot water. Let it steep for about 5 – 7 minutes and remove the tea bag.
Step 3: Assemble the drink
- Put sugar gradually into the glass of tea liquor and stir well until it dissolves. You can adjust the amount to suit your taste.
- Let the tea liquor cool down a little. Then add calamansi juice and cubed aloe vera and stir well.

Herbal calamansi tea is a harmonious combination of calamansi’s sourness, licorice’s delicate aroma, ginger’s warm flavor, and jujube’ sweetness and softness. Moreover, goji berry, licorice, and jujube are healthy herbs that are popular in traditional medicine. This blend gives you a delicious and nutritious beverage.
Ingredients for 6 servings
- 5 black tea bags
- 500g fresh calamansi
- 100g goji berries
- 200g jujubes
- 5g licorice
- 125g fresh ginger
- 65ml lime juice
- Sugar
- Salt
- Ice
Instructions
Step 1: Prepare the ingredients
- Wash the calamansi, halve them, and squeeze to get the juice. Set aside one calamansi and cut it into thin slices.
- Peel the ginger, wash it, and cut it into small strips. Put ginger strips, 200g sugar, 150ml water, and some salt into a pot. Cook the mixture under medium heat for about 5 minutes. When the sugar totally dissolves, add 50ml lime juice, stir well, and continue to cook for 10 minutes. Turn off the heat and let the mixture cool down.
- Add 300g sugar and 250ml water to a pot and cook for 5 minutes. After the sugar dissolves, add 15ml of lime juice and stir well. Then add 200g jujubes, stir well, and cook for 15 minutes over low heat.
Step 2: Brew the tea
- Put 5 tea bags, 5g of licorice, and 1l of hot water at 80 – 90ºC into a pot. Cover and let them steep for 5 – 7 minutes.
- Remove the tea bags and licorice to get the tea liquor.
Step 3: Assemble the drink
- Add 300ml of tea base, 30ml of sugar, and 20ml of calamansi juice to a jug and stir well.
- Put ice cubes into the glasses, and pour the tea blends into them.
- Add some calamansi slices, 15ml sugar-ginger mixture, 20ml of jujube-sugar mixture, and 10g of goji berries to the glass. Mix them well and enjoy.
- If you prefer enjoying it warm, you can mix all the ingredients after brewing the tea and enjoy.
