Black tea

Traditionally, masala milk tea recipes used loose leaf tea, but today, there are more options for you to choose: CTC black tea, tea dust, or black tea bags. CTC stands for crush, tear, and curl, three processes of making black tea leaves into a granular or pellet form. CTC tea gives your masala milk tea a rich brown hue, and a stronger taste. Meanwhile, tea dust and tea bags contain finer tea leaves, which are nearly in powder form. 

If you want to choose an Indian type of tea, you can choose between Assam tea, Darjeeling tea, and Nilgiri tea. Because of the differences in cultivation conditions, such as soil, temperature, and weather, each type of tea has a distinctive flavor and taste. If you are a fan of strong tea with deep hue, Assam tea is an ideal option. Additionally, Darjeeling tea is famous for its fruity taste. Known as the combination of the two kinds of tea, Nilgiri tea contains both fruity and strong bold flavor. Beside these Indian teas, you can also choose any types of black tea that you prefer. 

Spices

Spice blends in masala milk tea recipes are diverse as they vary depending on personal tastes. The most popular spices used are cardamom, cloves, and cinnamon. Following are black pepper, ginger, nutmeg, and star anise. Each spice has its own flavors and advantages, so you can freely customize according to your preference. 

Milk

How much milk is added to masala chai also depends on your taste. However, the amount of milk will affect the taste of masala milk tea. Too little milk can make your drink watery, while too much milk can lose the tea’s taste. Depending on the types of milk, the ratio of tea liquor to milk can range from 1:1 to 3:1. 

Sweeteners

There are numerous types of sweeteners which can be used for beverages on the market, including cane sugar, jaggery, coconut sugar, or honey. All of them are easy to find in the supermarkets, convenience stores, or grocery stores. The most common and basic sweetener is white sugar. You can add the sweeteners to the tea liquor after brewing and vary the amount based on your taste.

Masala milk tea recipes

Today, there are many different ways to quickly prepare masala milk tea, including masala chai concentrates, tea bags, loose-leaf blends, ready-made spice blends, or even ready-to-drink masala milk tea. However, the method using whole spices will bring the best flavorful masala chai. 

Ingredients

  • 2 cloves
  • A half of cinnamon stick 
  • 4 cardamoms
  • A pinch of ground black pepper
  • 3 teaspoons of CTC black tea or 3 tea bags
  • ½ teaspoon chopped ginger
  • A cup of milk
  • 2 teaspoons sugar

Instructions

Step 1: Prepare spice blend

Add cloves, cinnamon stick, green cardamoms, and black pepper to a mortar and pestle or grinder. Then grind them fine to release flavors better. 

Step 2: Prepare masala tea

Pour about 3 cups of water into a pot. Add 3 teaspoons of CTC black tea, ground spice blend and chopped ginger. 

Turn on the heat and keep a medium or low level. Boil the decoction for 2 or 3 minutes until it turns dark, and remove it from the heat. 

If you use tea bags, you should remove them before the next steps. After that, add sugar and pour milk into the mixture. Bring it to the boil again on a medium high heat. After it boils again, reduce the heat and let the mixture simmer for about 3 more minutes to remove the milk flavor. 

After turning down the heat, you will see a layer of cream on top of the pot. To break down this layer, use a soup ladle or a measuring cup. Take some tea with these tools and slowly pour it back to the pot from a height of more than one feet. Repeat this pulling tea steps 4 or 5 times until the cream is totally broken and mixed into the masala milk tea. When the milk fats are dispersed, your masala chai will taste better. 

Step 3: Serve masala milk tea

Strain the masala milk tea to serving cups with a sieve, and it is ready to enjoy hot. Besides, masala milk tea is usually served with snacks or biscuits.

Tips to create a perfect masala milk tea recipe

To make a best-taste cup of masala milk tea, there are some tips you should consider:

  • Ground spices bring better results than whole ones. It is because finer spices will release more oils and flavors.
  • Enzymes found in fresh ginger can cause milk to curdle. Therefore, if your masala milk tea recipe contains fresh ginger, you should boil the water with spices before adding milk. However, milk curdling only happens with fresh ginger, you can use dried ginger or ginger powder instead. 
  • Before adding milk, boiling the water and spices will help the spices release their flavor and rehydrate. 
  • Be careful with cloves because of their strong flavors. If you add too many cloves, it may overpower the flavor of tea. The usual amount is a half or a clove. 
  • Don’t boil the tea too long to avoid the bitterness.
