Simple steps to make Sugar preserved apricots
Ingredients: 1 kilogram of apricots, 1 kilogram of sugar, a little amount of salt
Instructions:
- Initially process apricots:
To clean the undercoat of apricots quickly, you should soak them in cold water mixed with salt. This method also helps apricots be cleaned of bacteria and impurities available. To make apricots more crunchy, soak apricots in clear lime water, then rinse them with clean water, take out to dry before soaking.
- Soak apricots
- Wash the glass jar, you should rinse it with hot boiling water and then let it dry.
- After the glass jar has dried, first you put a layer of sugar on the bottom of the jar and then put the apricots in, and so on, another layer of apricots add another layer of sugar until it runs out, and close the lid. You should not be tempted to put apricots into a full jar, but keep it about 5 cm away from the mouth of the jar, nor should the lid be too tight. It is best to create a small opening so that during the fermentation process, it does not overflow or produce foam and gas.
- When the sugar has melted and the apricots have begun to shrivel, close the lid tightly and leave it in a cool place.
- In particular, if you want to keep apricots from being scum, you should add a little salt when soaking, but also do not add too much salt because the water will be brackish.
- Soak apricots for about a month, when the apricots shrivel and emerge, you can use them. If during the soaking process, the sugar still remains on the bottom of the glass jar, you can stir it with a spoon to dissolve the sugar.

- Notices to choose apricots
If you choose pickled apricots, you should buy apricots that have fluff on the outside, the shape of the fruit is round, plump, yellow, or red. In particular, do not choose apricots that are crushed or wormed and the taste must be sour, not bitter. If it is bitter, the apricots will not taste good when soaked and choose the ripe ones until they are still hard, so when soaking the apricots, they will be more fragrant.
